Peanut Butter Bars


Finished with a drizzle of melted chocolate and a sprinkle of roasted peanuts, this is a simple and delicious dessert that everyone in the family is sure to enjoy.



Makes one 9-by-9-inch pan

  ½ cup smooth peanut butter  
  2 tablespoons unsalted butter, softened, plus more for greasing  
  ¾ cup light brown sugar, firmly packed  
  2 large eggs, lightly beaten  
  ½ teaspoon pure vanilla extract  
  ½ cup all-purpose flour  
  ¼ teaspoon kosher salt  
  pinch ground nutmeg  
    Semi-sweet and/or white chocolate, melted, for garnish  
    Dry roasted peanuts, lightly salted and chopped, for garnish  




  1. Preheat the oven to 350°F.  Butter a 9-by-9-inch baking dish and set aside.  In the bowl of an electric mixer, fitted with the paddle attachment, combine the peanut butter with the butter.  Beat on medium speed until well combined.  Incorporate the sugar, eggs, and vanilla extract, scraping the sides of the bowl, as needed, with a rubber spatula.  Then, add in the flour, salt, and nutmeg, mixing just until the mixture is combined.
  2. Spread the peanut butter mixture out into an even layer in the prepared baking dish.  Bake in the preheated oven until the top of the squares is golden brown and a cake tester inserted into the center of the Peanut Butter Squares comes out clean, 20 to 25 minutes.
  3. Remove the squares from the oven and set aside to cool.  To garnish the squares, drizzle the melted chocolate(s) over the surface of the squares, and sprinkle with some chopped dry roasted peanuts.  Cut the dessert into serving pieces and serve.
